Totally Vegetarian
This Saturday I decided to try something I've never done before - to cook a completely vegetarian soup. Looking through the recipes from a pretty book I got as a present, my choice stopped on the soup with zucchini and parmiggiano.
I noticed, that the availability of ingredients is a constant problem for any vegetarian cooking book. Luckily, my author was in favor of Italian kitchen, so that helped a lot.
If you are about to make a vegetarian soup, get ready to learn a lot of new roots, greens and spices. Since it wasn't my first experiment in gastronomy, I knew where to look for a helping hand. http://www.foodsubs.com/ is my favorite place to search for any unknown stuff, or its substitute.
Finally, you have to cut everything and wait for 1.5h while it fries and boils. But I think it was worth to try and my target audience looked quite satisfied.
